naturally green

I am always talking about food with vibrant colors and bright flavors. I also talk about colors not naturally occurring in nature. I also form redundant sentences?

This time of year, we see all kinds of foods made green. Green beer, green pancakes, even green fortune cookies.

Wait, green pancakes? I know, pancakes aren’t generally green, but mine are green because of the spinach, not an artificial food coloring. That is the one exception you’ll see here, everything else is … naturally green.

Since they remain one of my most popular recipes, and they are that exception, and since I just love them so much, I could not start a green food conversation with anything other than these:

spinach pancakes

edamame “egg” salad

plant based steak dinner

maple roasted beet salad with vegan ‘goat’ cheese

artichoke shiitake ceviche

spicy green Thai curry

wasabi peanut butter cups

spicy cashew and kale bowl

asparagus pepper bisque

quinoa bean burgers with basil aioli

lemon piccata enchilada

tahini kale stuffed waffles

grapefruit kale chiffonade salad

ginger lime Brussels sprouts

ginger lime Brussels sprouts

miso sesame kale chips

veggie fried rice

spinach blini with pimiento spread

broccoli cheese muffins

broccoli cheese muffins

lemon avocado massaged kale salad

chocolate cherry mint smoothie – or “The Hulk”

what is your favorite naturally green food?

… if you want to see more – green food for St. Patty’s Day!

Cheers – have a fantastic weekend!

I was JUST thinking about this yesterday while being bombarded with ads for foods that just shouldn’t be green. If only people ate naturally green foods year round! My favorite? It’s hard to choose, so I’ll have to go with broccoli, asparagus and avocado, probably in that order. I eat all three of them every day :)

P.S. I nominated you for the Vegan Woman’s Vegan Blog of the Year, so if your readers have a minute, I encourage them to go over there and nominate you as well ( I know you won’t promote this yourself…) You deserve it!

Naturally green does rule! It always cracks me up when folks try to cover up the green in green smoothies. There’s nothing more beautiful than green smoothies in my opinion and I love it best when they have that vibrant green taste, too. :-) Great roundup per usual, Kristina! Have a wonderful St. Paddy’s Day, my friend!

xo,
Shirley

I completely agree, Shirley – the bright green is much prettier than the brown hue that is the result of cover up attempts ;) and I love the taste of green, too (I think this could be one of my mottos, actually…)

hope you are having a great week, my friend!

Last year to celebrate St. Patrick’s Day I brought my students naturally green foods, like cucumbers, grapes, and green apples. You’d think they would have been upset not to have another articificially dyed green cupcake, but they were SO happy with the fresh fruits and veggies. [In fact, there was a bit of a riot over why one section got to have cucumbers and they were 'stuck with' grapes. WHAT?!?!]

Green food is the best…especially when it is natural! You know me, I throw spinach in practically EVERYTHING!

I love it when you do little round up posts like this…always reminds me of the things I still need to try of yours. And I’ll be darned if I didn’t forget about those cauliflower steaks yet AGAIN! Ugh!

well, get on it, girl – the cauli steaks are SO GOOD, one of our favorites… I always get good feedback on these roundups (people always say they are good reminders!) and I always find something I need to make again too.

Hi Kris, please write a cookbook. I will buy it for sure!!!! :)
Your recipes are so fantastic, and your pictures are stellar. I love kale..massaged kale salad with fruit is my favorite green food at the moment. Hope your week is going well.
