Last summer I was beyond thrilled to work with BACARDI® on a series of parties, recipes and more parties. When I had the opportunity again this summer, I did not hesitate to say yes.
This time it gets big – one of the BACARDI® mixologists made a spabettie signature cocktail. Just for me, based on my personality, style, and how I answered their questions. Unreal. Like I said, beyond thrilled.
They sent me the custom recipe and a big box of party favors.
Then I threw a party.
The recipe is the Southern Belle-ini – using a premium frozen BACARDI® Mixer, BACARDI® Rum and fresh fruit. Refreshing and fruity without being overly sweet – perfect for a summer afternoon party.
In creating the party menu around this cocktail, I kept things fresh and light:
Platters of fresh fruit skewers, whimsically standing on end ready to be dipped into a coconut yogurt fruit dip:
My deviled “egg” dip (recipe coming soon) with crispy salt and vinegar crackers:
Jason requested a tapenade, so I made my olive and pepper tapenade, adding more capers:
I took another shot at my vegan macarons – this time I made a strawberry cream and a key lime:
and a party at my house is not complete until a date gets stuffed with vegan goat cheese:
The party package included a blender (which I gave away to one lucky party guest at the end of the evening), and some party favors – recipe books, stainless cocktail muddlers, and just in time for summer – bright white BACARDI® Mixers sun visors.
White sun visors always make me think of my Uncle Dudley, who was a golfer and a boater, and just generally loved being out in the sun. Uncle Dudley enjoyed a quality cocktail, and I like to think he was there with us in spirit that day.
Back to the signature cocktail – this was delicious! Most of the BACARDI® Mixers are made with real fruit juice, and when blended with fresh fruit, the result is vibrantly fresh and bright flavors. Colorful too!
My signature cocktail used the Piña Colada mixer, and when I purchased it I also spied Strawberry Daiquiri and Margarita mixers – and when you start thinking like a BACARDI® mixologist and morph into an Ultimate Party Planner, the flavor combinations are endless!
The Southern Belle-ini was easy and quick to make, and fits with my Party Planning 101 – make one signature drink for the event, to serve and satisfy a crowd!
1 can frozen BACARDI® Mixers Piña Colada Mix
½ cup BACARDI® Superior Rum
½ cup BACARDI® Peach Red
1 1/2 cup raspberries
1/3 cup lemon juice
5 cups of ice
6 raspberries for garnishes
6 mint sprigs for garnishes
Combine all ingredients except garnishes in a blender and mix on high for about 30 seconds or until completely smooth. Pour into chilled cocktail or martini glasses. Garnish with mint sprig and raspberry.
